Menus on Monday


I've been looking at the menus people have posted on I'm an Organizing Junkie for a few weeks and decided that I'll post mine too.

With it being Thanksgiving this week, we've been thinking of what we want to eat. Neither of us are big on meat anymore, so we want to have something vegetarian/vegan. We'll be having our meal sometime this week or next. It depends when my son will be home early enough to have it. I've found a few recipes I'd like to try, so our menu will be something like this: Salisbury Steak (or I might get lazy and buy some chicken breasts) with vegetarian gravy, crash hot potatoes and vegetables or a salad. And pumpkin pie of course, but it will be made with carrots as I can't get a pumpkin here. Or maybe I'll try Pumpkin Pie Brownies. Edited to add: I decided at the last minute to bake some rolls and I used Lori's Quick Roll recipe for the first time.

For the rest of the week I'm thinking of the following.
Macaroni casserole that my son's grandmother sent over.
Leftover Black Bean and Tortilla Bake from the freezer
Homemade Rice a Roni with something from the freezer.
Pasta with Peanut Sauce (but I'll purée some peanuts to use them up instead of using peanut butter)
Homemade pizza on the weekend if my son is home.

mmm I love the idea of carrots instead of pumpkin for pie. I have been thinking of trying pumpkin with squash but figure that would just taste the same.

Came over from organizing junkie. It sounds like you might be in Canada. Can you find sweet potatoes? They're great in pies, muffins, etc.

Yum! I appreciate the vegetarian recipes. The black bean tortilla thing is going to be made here real soon :)
