Tuesday is for Tasting

I wanted to enter Chocolate-Covered Katie's chocolate giveaway and to I went over to look at her blog and for extra entries in the giveaway you can make one of her recipes and blog about it. I tried the Little Vegan Mashed Cauliflower recipe last week and this week I made her Chocolate Chip Cookie recipe.

I've been wanting to try more cookies made with oil instead of margarine and so this recipe was a good opportunity to do so. I didn't have any Ener-G egg replacer (I don't even know if they have it here) so I used corn starch instead. I found the texture to be more like a shortbread, but my cookies didn't look like the ones on Katie's blog, so I don't know if it was the cornstarch or that all of my ingredients are from over here. I'm thinking they would taste good also with a bit of peanut butter in them.

Ooh shortbread chocolate cookies actually sound really yummy. And of course, I think peanut butter sounds like a good addition to ANY recipe :o)
